Bake It

If you have been following for a while you may have seen the wish list my kids wrote for the holidays, it’s pretty similar every time and I can now guarantee that ‘making cakes’ will be on there! It’s actually a very frugal thing to make some muffins, so here is the basic recipe we use and you can add whatever you might have to this e.g. soft fruit, nuts, dried fruit, choc chips, cocoa powder, lemon juice…

Basic Muffin Recipe:

  • 2 cups plain flour
  • 3 teaspoons baking powder
  • 1/3 cup sugar
  • 1 egg
  • 8floz any type of milk
  • 3floz oil or melted butter

Turn the oven on before you start to warm up – and add the paper or silicone cases to a muffin tin.

Mix all the dry in one bowl, mix all the ‘wet’ in a jug and then add to the bowl and stir in. When all the dry are ‘gone’ into the mix you can stop stirring and add to the cases (we use an ice cream scoop).

Pop in the oven for 20 minutes or until you can smell them, they will rise a little so if you have a window the kids can sit and watch…

Mine love to lick the bowl, and also to do the washing up!
